Sergio started his career in his father's restaurant, Oud Sluis in Sluis in the Netherlands. He worked there for a total of 25 years. Since 2005, the restaurant has had three Michelin stars and has been in the top 50 of The World's 50 Best Restaurants for eight years. Regardless of the success of his restaurant, Sergio decided to close the doors of Oud Sluis in December 2013. The chef wanted to throw himself into new projects.
